Lisa’s Kitchen: Leek Vodka Sauce
A lovely early spring harvest are leeks. Here is a recipe for a tomato sauce with leeks and cream, also known as pink sauce.
You will need:
- 2 leeks, diced
- ¼ c garlic, chopped
- 4 c tomatoes; diced, drained
- 2 qt heavy cream
- ½ c vodka
- ¼ c basil, chopped
- ¼ c olive oil
- 1 tbsp chicken bouillon
- On medium heat, saute leeks and garlic in olive oil for 5 to 10 minutes.
- After removing the excess water from the tomatoes, add tomatoes and bouillon to the pan with leeks and garlic, and cook another 5 minutes.
- Begin to add heavy cream one cup at a time. With every addition of cream allow the sauce to heat before the next cream addition until heavy cream is gone.
You can add a little bit of salt and pepper, and some vodka for a kick. Also, you can substitute half and half for the heavy cream if you’d like to lighten the texture a little bit.
