Oh My, We Need A Pie With Lisa King
The weather outside is frosty, but the kitchen of the Freedom Farms Farmers Market is full of warmth and activity. Holiday preparations are in full swing, and the air is full of the scent of apples, pumpkins, and spices. Lisa King is in an apron and wielding a rolling pin. She is preparing to make 100 homemade pies.
Each pie is destined to become part of a family’s holiday tradition- at least, that is Lisa’s hope. “When you realize everything you touch is going on someone else’s table for the holidays, it’s got to be special” Lisa says. “I always make sure I put love in it. Nowadays you can’t buy too many things made with love.”
It’s not just the love that makes Lisa’s pies different. Each pie is made by hand from start to finish. All the ingredients are fresh and all natural, with no preservatives. Here in Lisa’s kitchen, bushels of apples await peeling and pumpkins are roasting in the oven. As always, Lisa King has prepared the crust herself from scratch. Her granddaughter, Lily, is helping to make dough balls and learning Lisa’s secrets.
Lisa’s crust, like her pie, is legendary. The secret of great pie, she says, is simple.
“Put love in it, practice, and don’t overwork it. Everybody works their pie dough too much. It should be like a pastry puff or a lady lock. Don’t over mix it, don’t mess with it too much, and keep your water very cold and the water and fat separated.” She laughs, and adds, “Of course, it also helps to make a hundred pies four or five times a week.”
If you don’t have time to practice making several hundred pies this holiday season, you may want to pick up one of Lisa’s masterpieces. She is proud to note that her pies have been called “sophisticatedly delicious.” She recommends baking it in advance of the holiday meal, then popping it into the oven to warm while you eat your main course. Lisa promises that the scent of that pie will fill your home with the essence of holiday cheer, and when you sit down to eat the pie you will taste the love in it.
